I think that often when you are trying to lose weight you think you have to give up having traditional breakfasts but that isn’t the case.
Quite often on a Sunday, as I get up later, I have a Sunday Brunch and today this included a bowl of fresh fruit and natural yoghurt and some bacon and eggs
If I hadn’t had the fruit I might have added some baked beans or another rasher of bacon but having scrambled or poached eggs with grilled bacon and adding tomatoes and mushrooms you can have a great breakfast. As a tip, I poach my mushrooms with a beef Oxo cube as this adds no fat and keeps them really yummy and soft.
Mid afternoon I will have a small snack, maybe some crisp breads and low fat cheese and then I will be okay for my main meal of the day.

I am a bit late posting my blog as I spent the weekend celebrating my daughters wedding. We really couldn’t have had better weather and it was so lovely to see her so happy.
I now have a house full of flowers from the day and some of the amazing cake to finish. The cake was made by her chief bridesmaid and was filled with wonderful fruit and alcohol flavours. A layer of passion fruit and chocolate; a second of champagne and strawberries; and the top layers of kirsch and chocolate.

We spent a fabulous day at Somerford Hall in Brewood Staffordshire and if you are looking for a wedding venue I would highly recommend them as the day ran so smoothly, the food was amazing and the staff could not have been more helpful.

I know that lots of people really struggle to find time to cook and often resort to take aways or ready meals. The only problem with this is that often those take aways can be just overloaded with calories.
A portion of Fish and Chips from a shop would be anything from 750 to 1000 calories (without peas or any sauces)
A 12 inch pizza around a 1000 calories
and a Chicken Tikka Marsala a staggering 1250 calories
Whereas in around 15 minutes you could cook this for less than 250 calories
Just Poach a piece of smoked haddock in some skimmed milk ( I prefer this not coloured yellow but I have shown this for illustration) with a poached egg and a portion of steamed broccoli and it would be ready before you could order or collect a take away.

A more recent happy holiday picture
This week there has been some devastating news in terms of the tragic loss of life and terrible injuries sustained in Manchester. Particularly as it had affected so many young people.
Equally I recently lost a friend following her short but courageous fight against cancer at the young age of 45.
It makes you realise that you need to live your life to the full, as you never know what is around the corner. I am a firm believer that you should keep yourself as healthy as you can, and enjoy things with your friends and family as much as possible.
I can remember my grandparents saving to enjoy holidays in their retirement only to find that they were no longer well enough to do the things they had dream of. I will not be repeating that!
So don’t put living life off enjoy it while you can!

As to day is world baking day and you are a lover of cakes this can be be a bit of problem if you are trying to lose weight. Please find two of my go to recipes for cakes you can have as a snack without going over the top. They are great for sharing and also keep well if you can resist eating them all at once #worldbakingday
120 calories each
10 minutes to prepare cooking time 25 minutes
100g Low Fat Spread
120g Soft brown sugar
1tbsp golden syrup
225g rolled oats
½ tsp ground all spice
Melt the low fat spread with the sugar and golden syrup
When melted add the oats and all spice and mix thoroughly
Spoon onto a baking tin 11 inches by 4 inches, which is lined with baking parchment.
Press down so it is level then bake at 190º for 20-25 minutes until golden brown
Cut into 16 portions and leave to cool – Store in an airtight tin
Preparation time: 15 minutes
Cooking time: 20 minutes
8oz (240 grams) Plain Flour
2 ½ teaspoons of baking powder
¼ teaspoon salt
¼ teaspoon of ground cinnamon
Good pinch of grated nutmeg
4oz (120 grams) low fat spread
4oz (120 grams) brown caster sugar
2oz (60 grams) sultanas
1 egg beaten
Approximately 4 tablespoons of water.
Line a large baking sheet with non-stick baking parchment
Sieve the flour, baking powder salt and spices into a bowl. Then stir in the sugar
Rub in the low fat spread until evenly distributed throughout the flour. Then stir in the sultanas
Make a well in the centre then pour in the beaten egg and 2 tablespoons of water.
Mix to form firm dough adding extra water as required
Shape the mixture into 12 mounds on the baking tray and rough up with a fork to make the rock shape.
Bake in a preheated oven at Gas mark 6 200C 400 F for about 20 minutes until risen and brown
Cool on a wire rack.
Will store in an airtight box/tin
