Love Spaghetti Bolognaise try this

Quite often at this time of year we are all very busy rushing around to get everything done for Christmas.

One of the favourite meals for most people is a ‘Spag Bol’

Only problem is that these can be very calorific and full of sugar if you use a jar of sauce.

So here is my quick recipe which is low in calories.  This recipe is for 1 so just multiply the ingredients by the number of people you want to cook it for nothing could be easier.

Spaghetti Bolognaise

Spaghetti with Rich Tomato Bolognese Sauce          Serves 1                   Prep and cooking time – 45 minutes 450 calories

Freezing recommended

1 teaspoon olive or vegetable oil

1 very small onion, chopped finely

1 small garlic clove, crushed (optional)

1 celery stick, sliced

1 small carrot, sliced

7oz 210g canned chopped tomatoes

3oz 90g button mushrooms, wiped and sliced

1/2 teaspoon dried mixed Italian herbs

1 teaspoon tomato puree

90g lean minced beef

1 rasher of lean bacon is small pieces

60g spaghetti or macaroni

Dash of Worcestershire Sauce

Salt and pepper

1 teaspoon parmesan cheese, to serve

Heat the oil in a medium size saucepan and sauté the onion, bacon and garlic, if using, for 4-5 minutes until softened.

Add the celery and carrot and cook, stirring, for 2 minutes more.

Pour the tomatoes into the saucepan and add the mushrooms, herbs, tomato purée and Worcestershire Sauce, stir well, and then bring to a boil. Cover and reduce the heat, Simmer gently for 10 minutes

Meanwhile, form the minced beef into patty shapes and cook  under a hot grill, turning it once, until fat stops dripping. Crumble the meat into the saucepan and cook uncovered for 10 minutes more.

Meanwhile, cook the spaghetti or macaroni in plenty of boiling, lightly salted water for about 6-8 minutes until just tender

Check the seasoning of the sauce, adding salt and pepper according to taste. Drain the spaghetti or macaroni, place it on a warmed serving plate and top with the Bolognese sauce, Sprinkle the parmesan cheese on top and serve at once.

Vegetarian option- substitute 40z 120g of minced Quorn for the minced beef, adding it to the sauce with the canned tomatoes Omit the bacon

If you’re freezing the recipe, freeze the sauce only and cook the pasta just before serving.
