As to day is world baking day and you are a lover of cakes this can be be a bit of problem if you are trying to lose weight. Please find two of my go to recipes for cakes you can have as a snack without going over the top. They are great for sharing and also keep well if you can resist eating them all at once #worldbakingday
120 calories each
10 minutes to prepare cooking time 25 minutes
100g Low Fat Spread
120g Soft brown sugar
1tbsp golden syrup
225g rolled oats
½ tsp ground all spice
Melt the low fat spread with the sugar and golden syrup
When melted add the oats and all spice and mix thoroughly
Spoon onto a baking tin 11 inches by 4 inches, which is lined with baking parchment.
Press down so it is level then bake at 190º for 20-25 minutes until golden brown
Cut into 16 portions and leave to cool – Store in an airtight tin
Preparation time: 15 minutes
Cooking time: 20 minutes
8oz (240 grams) Plain Flour
2 ½ teaspoons of baking powder
¼ teaspoon salt
¼ teaspoon of ground cinnamon
Good pinch of grated nutmeg
4oz (120 grams) low fat spread
4oz (120 grams) brown caster sugar
2oz (60 grams) sultanas
1 egg beaten
Approximately 4 tablespoons of water.
Line a large baking sheet with non-stick baking parchment
Sieve the flour, baking powder salt and spices into a bowl. Then stir in the sugar
Rub in the low fat spread until evenly distributed throughout the flour. Then stir in the sultanas
Make a well in the centre then pour in the beaten egg and 2 tablespoons of water.
Mix to form firm dough adding extra water as required
Shape the mixture into 12 mounds on the baking tray and rough up with a fork to make the rock shape.
Bake in a preheated oven at Gas mark 6 200C 400 F for about 20 minutes until risen and brown
Cool on a wire rack.
Will store in an airtight box/tin
I know from experience that losing weight can be such a daunting task and it is so tempting to look for a miracle.
Suffice to say miracles don’t happen but you can lose weight just by eating healthily and I can help to you to do this at the rate of 1-2lbs a week. Now I know you are probably thinking that doesn’t sound like a lot, but trust me it soon mounts up and makes such a difference. Also if you lose it steadily at a healthy rate it is so much more likely to stay off.
A pound of human fat is a pretty disgusting sight but it is even worse when you think that this fat also will wrap itself round your heart, liver and kidneys making them work so much harder than they should. Just check out the pictures!
So just losing one pound of fat each week will make a difference.You only have to see what it looks like to convince yourself. I know I struggle to think of myself having 75lbs of excess weight but am so glad to be rid of it now. If you lose one pound a week for a year you will lose 52lbs just under 4 stone and how great could that be!

Sometimes things stop you from exercising even though you might want to. Usually this is family commitments, work or just too much to do and sometimes it is injury.
I am feeling particularly fed up at the moment as usually I exercise at least 3 times a week at the gym and regularly walk a minimum of 10,000 steps a day but not at the moment.
Unfortunately I have broken my ankle tripping on the stairs, I though it was a bad sprain only to find out after almost a week after continuing to walk on it that it was broken so I am now in cast with crutches and told to rest!
I am seeing this as a blip in my routine so will get straight back to exercise as soon as possible but in the meantime I am having to be patient.
