Happy Easter

Happy Easter and I hope like me you enjoy this holiday with your family.

Of course at Easter we all tend to be spoilt with the traditional chocolate Easter eggs and so much more.  The one thing that is so difficult with chocolate is that it so easy to eat and so difficult to resist.

I have been given  lovely box of Lily O’Brien dessert chocolates instead of an egg and these are quite hard to resist but I will try to just have one or two today and then keep the others so I can have one with a cup of coffee each day.

Thinking back to Easter Eggs though it can be a good idea after Easter Sunday to break these up if you have a  lot and put the pieces in the freezer to have as a treat from time to time.

I know this Easter it will be hard to resist chocolate particularly as the weather forecast is so bad.

But I do think having a little bit of chocolate to look forward to is better then the feeling you have when you have eaten too much chocolate perhaps feel a little sick but certainly guilty.

If you want to lose weight then here is an update from one of my clients on her successful weightloss with Weight Away.

“I first joined Weight-away in July 2014 with the aim of losing 2 Stone before my daughter’s wedding in January 2015.  Following Sue’s eating plan and with her support I achieved that goal and dropped from a size 16 to a size 12 in 7 months.

14 months and one grand-daughter later I am still maintaining my healthy weight and still wearing size 12 clothes.  In the past when I have dieted the weight has returned within a short period of time, but this time it’s different and the reason for that is because my relationship with food has changed for good.

I no longer deny myself foods that I enjoy, but have learned to eat smaller portions or to substitute them with something similar but with fewer calories, for example I enjoy cheese and biscuits as a snack in the evening but now substitute the crackers for melba toasts and the cheddar for low fat Philadelphia.

I also balance my meals better throughout the day.  I eat more for breakfast which keeps me going until lunchtime so that I’m not tempted to snack mid-morning or over-eat at lunchtime and in the evening.

I allow myself to indulge a little more at weekends and during celebrations because I know that I can balance things out the next day by cutting down on permitted snacks or by following one of Sue’s balancing day eating plans.

I no longer obsessively weigh myself every day, or even every week.  I am in full control, knowing that weight naturally fluctuates throughout the day/week/month but as long as I am eating sensibly and keep within a certain weight range I will maintain my weight-loss and clothing size.

I continue to use the weight-away recipes on a daily basis (I have quite a collection of them now), as my family love them too and I can trust that they are healthy, carefully calorie counted and correctly portioned and they are so tasty and easy to prepare.

Contacting weight-away was one of the best decisions I have ever made.  It has changed my life by making me more healthy, confident and restoring my energy levels so that I am more active and can keep up with my growing grand-daughter.”

Quick and Easy Healthy Meal for the Family and weight loss

If you struggle to lose weight and eat with your family you can cook this recipe but still be able to lose weight following a healthy eating plan either yourself or by joining me at Weight Away for more healthy recipes at http://www.weight-away.org

I think that often when you are trying to lose weight you find yourself eating differently from your family and friends.  This makes life so hard and there is nothing worse than drinking a shake or eating a plate of salad when your family are tucking into a hearty meal.

Try this recipe for a cottage pie which is easy to do.

Cottage Pie

Serves 4

425 calories per portion including veg


500 grams of lean steak mince

400 gram tin of chopped tomatoes

Large onion chopped finely

Beef Oxo

100 grams Mushrooms

Teaspoon of Mixed Dries Herbs

Dash of Worcester sauce

500 grams of boiled potatoes mashed with a dash of milk

Salt and pepper

Serve with Broccoli and Carrots

To cook

Make the mince into burger shapes and grill until cooked through.  Leave to cool and then break it back up to look like mince.  In the meantime boil the potatoes and mash them with a splash of milk.

Gently soft fry the onion for a few minutes by just adding a drop of water then add the tin of tomatoes, beef oxo, mixed herbs and Worcester sauce and the mushrooms (if you don’t eat mushrooms you could add celery at this point or both).  When the sauce has cooked for about 10 mins stir the mince into it season and then pour into a casserole dish and top with the mash potato.  I always sprinkle a little paprika on the top to give the dish colour. Cook in the oven at 180 degrees for about 20 mins. While it is in the oven steam your vegetables to serve with it.

As you are spooning the mince into the casserole dish you should have some juice left in the sauce pan which you can add to some gravy granules if you make yourself gravy to go with it.  This will be very tasty.

Happy Mothers Day to all those in the UK who are celebrating Mothers Day.  It is so lovely to be cherished by your family and I am so proud to be the mother of two beautiful daughters and also the proud grandmother of my darling grandaughter.

Having my granddaughter who is so lively and energetic makes me think back to the time when my daughters were young and as I was overweight I struggled to play with them far more than I should have done.  Of course this has to remain a regret.
