Cooking healthy meals can be great for the family

Quite often when you are trying to lose weight you think that you have got to eat something different to everyone else.

This doesn’t have to be the case and if it is a pasta meal you can give your partner a bigger portion if you need to. That is why sharing meals can be easy and means you don’t have too feel that you are missing out.

This week I am sharing a recipe for Chicken Cacciatore which I bulk up with mushrooms and also you can omit the anchovy fillets and olives if you don’t like them.

Chicken Cacciatore

Recipe for Chicken Cacciatore
Serves 4
400 calories per serving
Prepare 25 minutes and cooks in 40 minutes

400g whole-wheat pasta
4 skinless chicken breasts
1 tbsp extra – virgin olive oil
2 onions, thinly sliced
1 red pepper, deseeded and thinly sliced
2 garlic cloves, peeled and finely chopped
2 anchovy fillets, chopped
400g can of chopped tomatoes
100g chopped mushrooms
125ml white wine
60g tomato puree
2 tbsp Worcestershire sauce
1 tsp muscovado sugar
200ml chicken stock, made from a cube
6 olives, pitted and chopped

To serve
handful of fresh parsley, chopped

Cook the pasta according to the pack instructions Meanwhile, lightly dust the chicken with plain flour and a little freshly ground black pepper.

Heat the oil in a large, heavy based pan and brown the chicken over a high heat for 10 minutes them remove from the pan.

Add the onion, pepper, garlic, anchovies and 1 tbsp water. Sauté for 7-8 minutes until the onion softens. Add the chopped tomatoes, wine, tomato puree, Worcestershire sauce, sugar and chicken stock. Bring to the boil, reduce the heat and simmer for 20 minutes.

Return the chicken to the pan, along with any juices. Add the olives and simmer for a further 5 minutes until piping hot and the chicken is cooked through.
